Crockpot minestrone

6 cups of vegetable broth
2 cans tomato juice or canned tomatoes
1 small onion chopped
2 large carrots peeled and chopped
1 medium zucchini sliced about an inch thick
2 cloves minced garlic
2 cans of kidney beans or 1 cup dried kidney beans
1 tablespoon apple cider vinegar
1 1/2 tablespoons Italian Seasoning
1/2 teaspoon salt
1/2 teaspoon pepper

Simply put all of these in the crockpot in the morning, cook on high 8-10 hours and serve with a fresh loaf of bread and crackers.
